Sweet Potato Hash
Recipe:
Preheat oven to 425 degrees. Cut up 2-3 sweet potatoes to small bitesize pieces and add oil and salt and pepper and toss. Place on cookie sheet. Cut up broccoli to small bite size pieces and toss with oil and salt pepper and place on a second cookie sheet. Once oven is done preheating, add the sweet potatoes and cook 35-45 minutes until crispy. Add broccoli after about 10 minutes in, keep an eye on it that they get crispy and not burnt, lol. Cut up a honeycrisp apple and a sweet onion and place in a bowl. Add 6-8 pieces of bacon to a large frying pan. Place on a paper towel lined plate. Cook the apples and onion in the bacon grease until tender. In a separate smaller pan, fry an egg. Once the sweet potatoes and broccoli are crispy, add to a bowl with apples and onion. Top with the fried egg and squeeze a lemon on top. Season with salt and pepper to taste. Serve!
