Ingredients: 2 cans coconut milk. 1/2 cup maple syrup. Zest of 3 limes. 1/2 cup lime juice.
Instructions: In a blender, combine coconut milk, maple syrup, lime zest, and lime juice. Blend until smooth. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the churned ice cream into a freezer-safe container and freeze for at least 4 hours or until firm. Serve scoops of coconut lime ice cream garnished with additional lime zest, if desired.
