Ingredients: 2 cups arugula. 2 cups radicchio, shredded. 2 cups endive, chopped. 1/4 cup extra virgin olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon Dijon mustard. Salt and pepper, to taste. 1/4 cup shaved Parmesan cheese.
Instructions: Put arugula, radicchio, and endive in a large bowl and mix them together. To make the dressing, mix extra virgin olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl with a whisk.
