Ingredients: 1 large butternut squash, peeled and cubed. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. Salt and pepper to taste. 1/4 cup heavy cream optional. Fresh parsley for garnish.
Instructions: Preheat oven to 400F 200C. Toss butternut squash cubes with olive oil, salt, and pepper on a baking sheet. Roast squash in the preheated oven for 25-30 minutes, or until tender and lightly browned. In a large pot, saut chopped onion and minced garlic until translucent. Add roasted butternut squash, vegetable broth, cinnamon, and nutmeg to the pot. Simmer for 15-20 minutes. Using an immersion blender, blend the soup until smooth. Stir in heavy cream if using, and adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley.
