This Mexican Corn Dip is a skinny and easy-to-make appetizer perfect for parties or game day gatherings. Packed with flavor from salsa verde, lime juice, and cumin, this dip is lightened up with low-fat Greek yogurt while still being creamy and delicious. Ingredients: 1 can 15 ounces low-sodium black beans, rinsed and drained. 1 can 15 ounces low-sodium corn, drained. 1 cup low-fat Greek yogurt. 1 cup salsa verde. 1/2 cup diced red onion. 1/2 cup diced bell pepper. 1/2 cup chopped fresh cilantro. 1 tablespoon lime juice. 1 teaspoon ground cumin. Salt and pepper to taste. Optional toppings: sliced jalapenos, diced avocado, shredded cheese, chopped green onions.
Instructions: Add Greek yogurt, salsa verde, red onion, bell pepper, cilantro, salt, pepper, lime juice, and cumin to a large bowl. Pour in the black beans. Mix the ingredients together well until they are spread out evenly. Put the dish in the fridge for at least 30 minutes with the lid on to let the flavors mix. Taste the food before serving and make any necessary seasoning changes. Add any toppings you'd like on top. You can dip it in tortilla chips or fresh vegetables.
