The Quinoa Chickpea Almond Salad with Roasted Scallion Dressing is a tasty and healthy salad that is full of protein and fresh herbs. This healthy dish has a unique smoky flavor from the roasted scallion dressing.
Ingredients: 1 cup quinoa, rinsed and cooked. 1 can 15 oz chickpeas, drained and rinsed. 1/2 cup almonds, sliced and toasted. 1 bunch scallions, roasted and chopped. 1 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup extra-virgin olive oil. 2 tablespoons lemon juice. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Cook quinoa according to package instructions and let it cool. Preheat your oven to 400F 200C. Place scallions on a baking sheet, drizzle with olive oil, and roast for 10-15 minutes until slightly charred. Remove and chop them. In a large bowl, combine quinoa, chickpeas, almonds, cherry tomatoes, cucumber, roasted scallions, parsley, and mint. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing. Pour the dressing over the salad and toss to coat all ingredients evenly.
