Ingredients: 2 lbs grape tomatoes, halved. 2 tbsp olive oil. 1 onion, chopped. 3 cloves garlic, minced. 4 cups vegetable broth. 1 cup heavy cream. Salt and pepper to taste. Fresh basil for garnish.
Instructions: Preheat oven to 400F 200C. Toss halved grape tomatoes with olive oil and spread on a baking sheet. Roast tomatoes in the oven for 25-30 minutes until they start to caramelize. In a large pot, saut chopped onion and minced garlic until softened. Add roasted tomatoes to the pot and stir well. Pour in vegetable broth and bring the mixture to a simmer. Use an immersion blender to puree the soup until smooth. Stir in heavy cream and season with salt and pepper to taste. Simmer for an additional 10 minutes to allow flavors to meld.
