Ingredients: 200g firm tofu, cubed. 2 tablespoons miso paste. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon honey or maple syrup. 1 tablespoon minced ginger. 2 cloves garlic, minced. 1 small onion, thinly sliced. 1 bell pepper, thinly sliced. 2 cups cauliflower rice. 2 green onions, chopped. 1 tablespoon sesame seeds. 1 tablespoon vegetable oil.
Instructions: In a bowl, mix miso paste, soy sauce, sesame oil, rice vinegar, and honey/maple syrup. Add cubed tofu to the mixture and let it marinate for 15-20 minutes. In a large skillet, heat vegetable oil over medium-high heat. Add minced ginger, garlic, and sliced onion. Saut until fragrant. Add marinated tofu and bell pepper slices. Cook until tofu is golden brown. Stir in cauliflower rice and cook until heated through. Sprinkle with chopped green onions and sesame seeds. Serve hot and enjoy!
