This is me trying to make a analysis on beth and horses.
Her being a doctor for horses is a joke about her not actually be seen as a real one But I think there another way to look at it.
Horses are see as wild free living creatures, while the ones she's work on are domesticated, kelp alive so they can work, in away I think beth feel the same about her own life.
In this sense space beth can be seen as the wild horse, going out living free while normal can still live a normal.
I never thaught about it that way it's really good analise. Another interesting thing is even thaught she could easly leave the job she isn't satisfied with but she choose to stay. I like to think she keep working to feel useful and needed in some way or she simple get used to feeling miserable like domesticated animals can't be released free because they too used to being held in captivity and simply wouldn't survive in wild. She could also feel guilty with leaving her family to become space rebel like Space Beth because she got abandoned in her childhood and she wouldn't want to do the same to her family.
