These Sesame Ginger Shrimp Bowls are a flavorful and nutritious meal option that's quick and easy to make. The marinade infuses the shrimp with delicious Asian-inspired flavors, while the sautéed vegetables add color and crunch. Serve over rice or quinoa for a satisfying and balanced meal.
Ingredients: 1 lb shrimp, peeled and deveined. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon minced ginger. 2 cloves garlic, minced. 2 cups mixed vegetables such as bell peppers, broccoli, and snap peas. 2 tablespoons vegetable oil. Salt and pepper to taste. Cooked rice or quinoa, for serving. Sesame seeds and sliced green onions for garnish.
Instructions: Put shrimp, soy sauce, sesame oil, ginger, and garlic in a bowl and mix them together. For 15 minutes, let it sit. Put the vegetable oil in a big skillet and heat it over medium-high heat. Put the shrimp in the pan after marinating them. Cook for two to three minutes on each side, until they turn pink and opaque. Take it out of the pan and set it aside. Put the mixed vegetables in the same pan and stir-fry them for 4 to 5 minutes, until they are soft but still crisp. Add pepper and salt. Put shrimp and vegetables that have been sauted on top of cooked rice or quinoa. Before serving, top with sliced green onions and sesame seeds.
