These easy soy-peanut noodles are a great mix of Asian flavors. The chewy noodles and crunchy vegetables go great with the creamy peanut sauce.
Ingredients: 200g noodles. 2 tbsp soy sauce. 2 tbsp peanut butter. 1 tbsp sesame oil. 1 tbsp rice vinegar. 1 tbsp honey. 2 cloves garlic, minced. 1 tsp ginger, grated. 1/4 cup chopped peanuts. 2 green onions, sliced. 1/2 red bell pepper, thinly sliced. 1/2 cup shredded carrots. 1 tbsp sesame seeds optional.
Instructions: Cook noodles according to package instructions. Drain and set aside. In a small bowl, whisk together soy sauce, peanut butter, sesame oil, rice vinegar, honey, garlic, and ginger until smooth. In a large skillet or wok, heat the sauce mixture over medium heat until warmed through. Add cooked noodles to the skillet, along with chopped peanuts, green onions, red bell pepper, and shredded carrots. Toss to coat noodles evenly with the sauce and heat until vegetables are slightly softened, about 2-3 minutes. Serve hot, garnished with sesame seeds if desired.
