Ingredients: 1 cup quinoa, cooked and cooled. 1 can 15 oz black beans, drained and rinsed. 1 ripe mango, diced. 1 avocado, diced. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/3 cup orange juice. 2 tablespoons lime juice. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large bowl, combine quinoa, black beans, mango, avocado, red onion, and cilantro. In a small bowl, whisk together orange juice, lime juice, olive oil, salt, and pepper.
