Rack of Lamb, oh so good and tender! Went well with my parsley chimichurri sauce. The key is to limit the seasonings to salt pepper and fresh herbs like Rosemary and parsley. Then you put a heck of a sear on all sides. This will develop wonderful fresh flavors on the crust while allowing the delicate lamb flavor to come through with its rare center.
