Japanese food called Nabeyaki Udon Hot Pot is comforting and filling. It has udon noodles, chicken, and vegetables cooked in a tasty broth. With nori and a soft-boiled egg on top, it's a hearty meal that's great for cold days.
Ingredients: 4 cups dashi broth. 2 tablespoons soy sauce. 2 tablespoons mirin. 1 tablespoon sake. 1 tablespoon sugar. 200g udon noodles. 100g chicken breast, thinly sliced. 1 egg. 1/2 cup sliced shiitake mushrooms. 1/2 cup sliced carrot. 1/4 cup sliced green onion. 1 sheet nori seaweed, cut into strips. 1 cup spinach leaves. Salt, to taste. Optional: kamaboko fish cake, tofu, tempura shrimp.
Instructions: In a pot, combine dashi broth, soy sauce, mirin, sake, and sugar. Bring to a boil. Add udon noodles, chicken, mushrooms, carrot, and green onion. Simmer until chicken is cooked and vegetables are tender. In a separate pot, boil water and cook the egg until soft-boiled, about 6-7 minutes. Peel and set aside. Add spinach leaves to the hot pot and cook until wilted. Season with salt to taste. Divide the hot pot into individual serving bowls. Place a soft-boiled egg on top of each bowl. Garnish with nori strips and any optional ingredients like kamaboko, tofu, or tempura shrimp. Serve hot and enjoy!
