This cranberry balsamic chicken recipe only takes 20 minutes and is a great choice for any event because it has a great mix of sweet and sour flavors. Cranberry sauce and balsamic vinegar work together to make a thick glaze that goes well with the soft chicken breasts.
Ingredients: 4 boneless skinless chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 1 cup whole berry cranberry sauce. 1/4 cup balsamic vinegar. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1/2 teaspoon dried rosemary. 1/2 teaspoon dried sage. Fresh parsley, chopped for garnish.
Instructions: Season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add cranberry sauce, balsamic vinegar, minced garlic, dried thyme, dried rosemary, and dried sage. Stir well and let the sauce simmer for 2-3 minutes. Return the chicken breasts to the skillet, spooning the sauce over them. Cover and cook for an additional 5 minutes, or until the chicken is cooked through. Garnish with chopped parsley before serving.
