This is my bike from when I was a kid, a 1996 GT Performer. I was 11. I rode this bike all the time, everywhere. If it could talk it’d tell some crazy stories. When I found it, it still had a handball wedged behind the seat probably from when I used to play down at the neighborhood intermediate school. Now, years later, I’ve been restoring it with my kids so we can ride together. Today, we went on a long bike ride through the neighborhood and down to the dirt trail in the woods. It was a great time. :: Zucchini Ricotta Rollups :: ▫️ Speechless 😶 ▫️ Zucchini and yellow squash sliced on a mandoline and grilled until soft. Quick marinara from San Marzano plum tomatoes and fresh basil. Ricotta mixture cut with marscapone, pecorino, salt and cracked black pepper. I spread some ricotta on the zuke, added fresh basil leaves and rolled up like a jelly roll. (I also made a few with thinly sliced Jamon Serrano.) I stood the rolls up in a round Pyrex and topped them with the chunky marinara and a sprinkle of pecorino. I put the dish back on a medium hot grill for 15 minutes to let the ricotta get all warm and oozy.
