I do not know much about the pre-colonial Americas unless we go further back to the last glacial maximum and beyond, but I'm fairly sure Medieval is not the right period term for it. The 9th-11th century Scandinavian countries, for example, are in their Viking Age or local variations thereof despite very much being active parts of their neighbours' contemporary Medieval worlds. The word Medieval implies an early/middle post-(European and Mediterranean-)Iron Age *christianised* setting. That's why the Scandinavian Middle Age/Medieval times appear so late - they're only considered to start once the countries are unified under a christened Crown and that only happens in the early to middle 11th century. Leif Erikson didn't bring any potatos back to northern Europe (on account of those excursions not even breaching modern day USA afaik) and Colombus and the European colonialisation of the Americas happening 3-400 years later, so that seagull has no business wolfing down any potatos.
