Beyond the classic syrup kind, I love making some with all types of fillings. Dulce de leche, jam, peanut butter, salted caramel, etc. 👌

No Bake Coconut Cheesecake
This is such an easy recipe that requires only 3 core ingredients for the filling (coconut cream, cream cheese and sugar). It’s also made with a healthier, edible cookie dough base instead of the standard cookie crust. 🙂
Also, the coconut flavour is surprisingly mild and easily disguised with other flavours (I love adding lime/lemon juice and zest 🍋) so don’t be put off if you’re not a big fan of coconut.

Quick Cheese & Tomato Pasta Salad
Whenever I absolutely can’t be bothered to cook, this is a simple meal I love to make. The tomato sauce is super easy, done in seconds with tomato purée, herbs, onion, garlic and lemon juice. 🙂
The best thing about our new house is the never-ending supply of blackberries growing wild at the back of our garden! 💜 I’ve been making a million recipes with them and this is one of my favourites so far: blackberry crumble bars, with an oat and walnut topping. Great as a snack or even breakfast. 🙂
