Does anyone have anything similar to chia pudding but way less caloric? I love the texture sooo much snd i could eat tons of it but it’s so high in calories
This is the recipe for the chia pudding I eat 5-6 days a week. I make it in a pint mason jars for easier transport & storage.
The addition of quick oats fixes the weird texture of chia pudding (in my opinion). It may still be too weird for others 😂
1 lb of whole chia seed costs me $10 before shipping. 1 lb yields ten chia pudding servings (if using my recipe).
To round out my work lunch, I have an apple or other fruit for a side, maybe some pistachios, peanuts, or roasted peas.
For work snacks, I choose from hard-boiled eggs, cheeses, butter + whole grain bread/crackers, edible nightshades like tomatoes & peppers, air-popped popcorn with creole seasoning, cashews, pecans, and dates.
I have to eat quickly since I don't get many breaks. Unfortunately, there are days when I eat my snacks for dinner because I didn't have time otherwise.
I still eat meat, but I have trouble digesting it. I miss fried foods. I miss barbecue.
But I don't miss feeling sick.
