Wouldn't be much nicer, in Holland to do as the as the Dutch do: get your stroopwafels from a random baker, Albert Heijn or even an Aldi's. The one thing you need is to know the word "roomboter" for unsalted butter and not margarine, so you get the good kind. That'll take you ten minutes, save you a fortune and give you all the time in the world to explore the city! No stroopwafel in the whole city of Amsterdam is good enough to wait in line for. None!
