Pi day, and I’m not in shape to do the crust. Just the thought of picking up a rolling pin makes me want to cry. So I found a magic blueberry pie. It’s not a Bisquick recipe like the ones we made fifty years ago (yes, I’m that old). You cook the blueberries with cornstarch, sugar, and flavorings/spices of choice, and let it cool down. Preheat the oven, and with a hand mixer combine flour, sugar, baking powder, an egg, butter, and water. Pour it into the pie pan, pour the filling right into the center, and bake. It’s on my stove top cooling down. Once it’s cooler, it’ll go in the fridge. This is the kind of pie that has to solidify, or you eat it with a spoon. I’m sure the taste would be fine, but I wasn’t aiming for blueberry pudding.
Hard rolls. I’ve been experimenting with a recipe and think I’ve got it.
4 cups bread flour
2 tsp instant yeast
1 tsp salt
2 tsp sugar
3 tbs olive oil
Enough lukewarm water to make it come together - about 1 3/4 cups
In a stand mixer, measure in everything but the water. Add 1 cup water and mix using the dough hook at the lowest speed, scraping the sides of the bowl. Then drizzle in a bit at a time until it comes away from the bowl completely and forms a homogenous dough. Increase the speed to 2, and knead five minutes. Remove the dough from the bowl, spray the bowl lightly with cooking spray, add the dough and spray a bit on top. Cover with plastic wrap, put it in your oven if it fits, with the light on. My mixer bowl won’t fit in my oven, so I put it into my microwave. Let rise for an hour, punch down, and transfer to a board.
If you have a pizza stone, put it into the oven and preheat to 375 F. In the meantime, divide the dough into five or six equal pieces. It’s up to you - it depends on how big you want your rolls to be. Roll them into balls, then roll unto football shapes. Place on parchment paper, cover, and wait for the oven. Once the oven is preheated, find a friend. Open the oven, pull out the shelf with the pizza stone, and bring the parchment to the stone and lower it down. It won’t burn. If you don’t have a stone, slip a baking sheet beneath the parchment and place in oven.
Bake for 20-24 minutes if you’re using a stone, longer if a baking sheet. In either case keep an eye on them and bake until golden
My newest thing is making my own cottage cheese. I read that it’s good to save the whey for bread making. So I used it in pizza dough. Much nicer than water. Last night I defrosted a pint of whey and warmed it slightly to use in baking bread in my Pullman pan. The loaf is pretty, tasty, and makes great toast! I made more cheese today and replenished my whey supply. Next project - cream cheese.
I have learned to make cottage cheese - I go through a container a week and decided to try to make it. I’ve made two batches, and it’s lovely. I didn’t save the whey the first time, but read that it’s good to use for baking bread. I made homemade pizza last night, and warmed some of the whey to use in the dough instead of water. It was very successful. I’ve put pizza pics here a few times, so instead am including cheese making photos.

I tried baking pizza on my Roc griddle. It was like having a pizza oven. Since it had to preheat, transferring the pizza to the griddle was a little tricky. Transferring it to a pan to,take to the table was much easier. I wonder how long it will take for the griddle to cool? I turned a slice upside down for you to show the browned crust. Homemade dough and sauce.
I’ve always wanted a Pullman pan for bread, and finally treated myself to one. This is the pan, and the first loaf.

Cherry cheesecake pie.
Bialys. Recipe from King Arthur Flour. They look wrong, but taste wonderful. I’ll keep trying.
Another bread. I found the recipe on the Fleischmsnn’s yeast website. It’s their challah loaf, which I made using my stand mixer and didn’t bother braiding.
I stocked up on baking supplies since we were going to be remaining inside for who knows how long. We’re down to four slices of store bought, so it was time to try a new recipe thst I found. Instead of hand kneading, which I’m no longer able to do without pain, I used my stand mixer. My house smells wonderful!

No recipe for this all-chocolate cake. Both the cake and buttercream were recipes I found online. I was invited to a brunch today, and volunteered a cake.
Just to let you know that I’m still around. I got the urge to bake this afternoon, and this resulted in a vanilla layer cake filled and covered with ganache. Guess I am still not as well as I would like to be, because I’m flat on my back now and had to get takeout for dinner. But I baked, and we loved it.
