COOK YOUR WAY INTO SOMEONES HEART
THIS VALENTINES I’VE CREATED SOME HEART STOPPING, LIP SMACKING, FLAVOUR LOVING RECIPES TO COOK AND EAT YOUR WAY THROUGH THIS AMOROUS DAY!
GLUTEN FREE CINNAMON & BANANA PANCAKES
Everyone loves pancakes, even more so when they’re gluten free! This is a simple and delicious recipe that will have you looking like a kitchen pro! What do you need? Coconut oil, bananas, cinnamon and eggs, yes that is it!
2 Pancakes:
2 x eggs 2 x bananas 2 x tsp cinnamon 2 x tsp coconut oil (butter or vegetable oil if preferred)
In a bowl mash the bananas and cinnamon with a fork until they become a soft and gloopy.
Crack in two eggs and beat until the mixture is properly combined.
Place a non stick frying pan on to a medium heat and let the coconut oil melt and cover the pan. If you have shaped cutters/moulds grease the insides and place it in the pan.
Pour the mixture into the cutters/moulds (if you don't have these pour directly into the pan to form a circular shape.
Cook for two minutes, remove the mould/cutter then with a flat spatula flip the pancake over and cook for a further minute.
To serve, I like to throw on some berried fruits, a dash of cream and dark chocolate pieces. However the topping choices are endless and everyone has their favourites.
So put your pinny on and get cooking! The heart wants what it wants, and mine’s screaming for pancakes!!!!
CHAMPAGNE, NECTARINE & FENNEL MONKFISH
When it comes to Valentine’s day, man or no man I require bubbles! This dish is designed with just that in mind. Now, go to your bathroom, pick your favourite soaps, pop them in and get that bath bubbling! Leave it to run and by the time you’ve finished prepping your meal the bath will be ready for you to jump into champagne in hand, by the time you’re done soaking the fish will be ready for the plate. So crack that bottle of bubbly open and pour yourself a glass!
2 Portions:
1 x tail monkfish ( 2 monkfish fillets if you prefer) 2 x nectarine 1 x fennel 3 x spring onions salt and pepper a splash of bubbly
Heat the oven to 180 degrees
Take a large piece of foil, place it on the surface shinny side up.
Place the monkfish in the centre (make sure your fishmonger has skinned and clipped it)
slice the nectarines into segments and place around the fish.
slice the fennel down the length of the body and place around the fish.
top and tale the spring onions, slice length ways and place on top of the fish.
Season with salt and pepper
To finish add a generous splash of the bubbly you have open (alternatively white wine)
Fold the foil into envelope edges, place on a tray and pop it in the oven
You now have 30 minutes to soak in bubbles whilst drinking bubbly! What could be better?!
To serve simply unfold the foil and place the fish and other elements onto a plate not forgetting to pour the juices over the top!
MORROCAN ROSE LAMB TAGINE
Spice things up this Valentines with my hearty tagine!
2 Portions:
250g diced lamb 400g butternut squash diced 6tsp ras el hangout 1/4 tsp rose harrisa paste 6 dried rose buds (petals) 1 preserved lemon sliced thin 28g chopped coriander 4 cloves of minced garlic 1 in piece of finely chopped ginger 4 large tomatoes diced 90g kalamata olives 120g chopped apricots 1tbsp coconut oil 2 cups water 1tsp fennel seeds
Heat the oven to 180 degrees
Grab a roasting tin, throw in the butternut squash, preserved lemon, tomatoes, kalamata olives, coriander and and chopped apricots in.
Now in a frying pan on a medium to high heat brown of the meat with the coconut oil, ginger, garlic, crushed rose petals, rose harris and ras el hanout.
Once the meat is browned off transfer it all into the roasting tin pour in the water, cover with foil and cook in the oven for 1hour.
Give the tagging a stir, to make the sauce thicker mush a few of the butternut squash pieces, re-cover and put back into the oven for another 30-40minutes.
Serve with rice, quinoa or couscous, it’s also delicious with a cooling mint and cucumber raita!
DARK CHOCOLATE COVERED FRUITS
A delicious treat full of goodness, and a perfect pairing with any red wine or bubbly.
Place a piece of baking paper onto a tray
Take a sauce pan and fill it with 2-3 inches of hot water
Grab a glass tumbler and brake the bitter chocolate into it.
place the glass in the pan and let the chocolate melt on a low heat.
Once the chocolate has melted simply dip the fruit in and place on the baking paper or place the fruit on the baking paper and pour the chocolate over.
Chill in the fridge for a minimum of 5 minutes and pull out when ready to eat, they should pull off easily from the paper.
CHOCOLATE MACARONS WITH A MINT GOAT CHEESE GANACHE AND AÂ Â RASPBERRY HEART GEL
If you can’t afford diamonds, these are the next best thing!!
Makes 20:
Macaron:
110g icing sugar 50g ground almonds 12g cocoa powder 2 Â free range whites 30g caster sugar
Ganache 50ml cream 50g goat cheese 2 stems of mint a pinch of salt
Raspberry Gel 160g raspberries 1 gelatin leaf
Pass the raspberries through a sieve so you are left with a smooth seedless puree
Put the gelatine leaf into a bain-marie with half the raspberry puree slowly stirring till the leaf dissolves.
Add in the rest of the puree and combine.
On a silicon baking sheet or piece of clingfilm pour the mixture and place in the fridge to set for 30 minutes.
Once set use a cutter to get your desired shape.
Heat the oven to 160 degreesÂ
cut a large piece of baking paper and place on a tray, with a two pound coin draw circles onto the paper as a guide for your piping. ensure there is a coins space between each circle.
Put the ground almonds in a bowl with the icing sugar and use a hand blender to grind it into a fine powder.
Add the cocoa powder and pass it through a sieve
In a separate bowl whisk the egg whites with the caster sugar till you get soft peaks.
Fold the mixture into the powder until you have a smooth consistency and spoon into a piping bag.
Pipe into the centres of each circle ensuring each macaron is the same size.
Place in the oven for 12- 15 minutes
Remove from the oven and leave to cool
With a hand blender mix together the goat cheese, cream and a pinch of salt.
allow the mixture to thicken slightly and stir in the thinly sliced mint leaves.
Whip until the ganache is of spooning consistency.
Spoon the ganache into a piping bag and use to sandwich the macaron halves together.
Place the macaron onto of the gel and use chocolate and mint leaves to decorate.
If you don't have time to make the gel spread a little raspberry jam onto of the ganache before sandwiching.
