I immediately thought of matcha also (I am a matcha snob), and I think he'd go for a cortado (something, something ratios of milk to coffee) and I fully agree with the ginger biscuits and maybe a speculoos biscuit if he's in a mood for very sweet biscuits.

I'm not exactly sure where the best place is the jump into this conversation, but on the subject of tea, I know there would be some lapsang souchong in his collection.

Now I'm imagining Gale as a tea snob. He's so careful about the temperature of the water, and steep times, and how to be gentle so you don't scald the leaves and end up with bitter tea. He knows so many varieties and the details for each one. He can always recommend the perfect tea for your mood. Need a pick me up? Black tea. Delicate flavour with delicious aroma? Jasmine. Want something calming and soothing? Chamomile with lavender. Gale almost never adds sweetener to his tea. The experience is about the quality of the leaves and their preparation, why mar that with additional sugar? In contrast, Tav makes chai by boiling the hell out of black tea, adding milk, sugar, ginger, cardamom, cloves, cinnamon, and black pepper and boiling the whole lot again. Gale is appalled, how dare Tav adulterate the tea like that! Until he tries it. And is force to admit that chai is delicious, actually.
