A tasty gluten-free take on the traditional Strawberry Pretzel Salad, with a crunchy pretzel crust, a creamy filling, and a cool strawberry topping. Great for dessert or any time you want something sweet!
Ingredients: 2 cups gluten-free pretzels, crushed. 3/4 cup unsalted butter, melted. 3 tablespoons granulated sugar. 8 ounces cream cheese, softened. 1 cup powdered sugar. 1 teaspoon vanilla extract. 1 8-ounce container frozen whipped topping, thawed. 1 6-ounce package strawberry-flavored gelatin. 2 cups boiling water. 1 16-ounce package frozen strawberries, thawed. 1 cup cold water.
Instructions: Preheat oven to 350F 175C. In a medium bowl, mix crushed pretzels, melted butter, and granulated sugar until well combined. Press mixture into the bottom of a 9x13 inch baking dish. Bake for 10 minutes. Remove from oven and let cool completely. In a large mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped topping until well combined. Spread mixture evenly over the cooled pretzel crust. Refrigerate for 1 hour. In a separate bowl, dissolve strawberry gelatin in boiling water. Stir until completely dissolved. Add cold water and frozen strawberries. Stir until strawberries are thawed. Pour gelatin mixture over the cream cheese layer. Refrigerate until set, at least 4 hours or overnight. Before serving, slice into squares and enjoy!
