These Easy Mini Ice Cream Sandwiches are a quick and easy treat that you will love. Great for when you want something sweet on a hot day!
Ingredients: 1 cup softened ice cream your choice of flavor. 12 mini chocolate chip cookies.
Instructions: On the flat side of 6 cookies, put a small scoop of softened ice cream. Carefully press the two cookies together to make sandwiches. Place one cookie on top of the other, flat side down. Before you serve, put the sandwiches in the freezer for at least 30 minutes to make them firm.
