A tasty and creamy seafood chowder made with ingredients that are good for keto dieters. This hearty dish is great for a cold night when you want to stay warm.
Ingredients: 4 cups seafood stock. 1 cup heavy cream. 1/2 cup diced celery. 1/2 cup diced onion. 1/2 cup diced bell pepper. 2 cloves garlic, minced. 1 cup cauliflower florets. 1/2 lb shrimp, peeled and deveined. 1/2 lb scallops. 1/2 lb white fish fillets, cut into chunks. Salt and pepper to taste. 2 tbsp butter. 2 tbsp olive oil. 1 tsp dried thyme. 1/2 tsp paprika. 1/4 cup chopped parsley.
Instructions: Put butter and olive oil in a large pot and heat them over medium-low heat. Put in the garlic, onion, bell pepper, and celery. It will take about 5 minutes of cooking until the vegetables are soft. Add the thyme, paprika, and cauliflower florets and mix them in. Go on and cook for two more minutes. Add the seafood stock and bring the soup to a low boil. Seafood, cream, shrimp, and white fish should be added. Slowly cook the seafood for about 5 to 7 minutes, or until it's fully cooked. Add pepper and salt to taste. Add chopped parsley as a garnish before serving.
