They may not be the fluffiest, or the tastiest, but all pancakes bring joy and can be eating with all manner of things and they are very cheap to make. Have you made a peanut butter and jelly sandwich with a pancake? It's delicious!

Things you need:

1 Cup Milk (oat, soy, almond, cow, etc)

1 Tablespoon vinegar (Apple cider, or whatever you have, even lemon or lime juice will work)

1 Teaspoon vanilla extract (optional)

1 Cup Flour

2 Tablespoons Sugar (or some kind of sweetener)

1 Tablespoon Baking Powder

some oil (or butter) for the pan

toppings:

maple syrup, peanut butter, jam, honey, agave, chocolate sauce, whatever you want to put on your little edible plate!

You will also need measuring cups and spoons, a bowl, a spoon, a stove, a pan, something to flip the pancakes with and a plate.

-I start with a 2 cup Pyrex measuring cup (works great because it has a spout to pour) I pour 1 cup of oatmilk into the measuring cup (or bowl) and add the vinegar (or citrus juice) and the vanilla extract. This is basically making an acidic "butter milk) that will interact with the baking soda to give the pancakes leavening.

-while that is sitting, collect all the other ingredients and measure them out.

-Then add the rest of the ingredients EXCEPT for the oil/butter and toppings) Stir it all together until it is smooth.

-turn on your burner to medium and place your pan on the stove. Melt the butter or oil in the pan.

-you will know the pan is hot enough when you can flick a tiny bit of water and the water skitters across and evaporates

-Here's the tricky business, the first pancakes is rarely perfect, and that's okay! It is still tasty! Pour a CD/DVD size amount into the pan, not too big or it will be hard to flip.

-Watch closely as one side starts to cook. You will start to see bubbles form in the batter, check the sides as they firm up and you can check the underside to make sure it is not burning.

-The pancake is ready to flip when the bubbles are mostly all popped and then you can flip it over and check on it until it is done.

-remove from the pan to a plate and top with whatever you wants, feel free to double or triple the recipe. I find this recipes makes 2 good sized pancakes.
