This dish is light and tasty, with sweet cherry tomatoes, tender shrimp, and fragrant basil tossed with light angel hair pasta. It's great for a quick and filling dinner during the week or for a special event.
Ingredients: 8 oz angel hair pasta. 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 4 cloves garlic, minced. 1/2 cup cherry tomatoes, halved. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste. 1/4 teaspoon red pepper flakes optional.
Instructions: Cook angel hair pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant, about 1 minute. Add shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Stir in cherry tomatoes and cook for another 1-2 minutes until they start to soften. Add cooked pasta to the skillet and toss with the shrimp and tomato mixture until well combined. Season with salt, pepper, and red pepper flakes if using. Stir in chopped fresh basil. Remove from heat and serve immediately, garnished with additional basil leaves if desired.
