Vegan Coquito
Ingredients: Clementines or Mandarins Lime Lemon Orange (for zest) Fresh Ginger Fresh Mint Hibiscus Leaves Cinnamon Nutmeg Fresh mint leaf Pineapple juice Tamarind Juice Creme de Coco or Coconut Juice
This drink was hugely popular this holiday season. As you all may (or may not) know, coquito traditionally has a ton of dairy in it preferably egg, heavy cream etc.. Since most of my family and many friends can not digest dairy I wanted to prepare something that everyone could enjoy yet still have that creamy taste and texture. The ingredients above are what I came up with for a party size (roughly 1.5-2 gallons).
Directions: Juice two bags of clementines (or mandarins of you can find them cheap), 2 limes, 3 lemons. Put juice into a large gallon sized container.
Peel and cut a few pieces of ginger. Remove mint leaves from their stems.
In a blender, begin to blend ginger, mint and citrus juice. You will have to blend in sections as you add the other ingredients.
Once ginger and mint are blended add pineapple and tamarind juice to taste.
Next add creme de coco and begin to blend into the juice blend.
Add grated nutmeg and two cinnamon sticks to each gallon sized container. Ad orange zest and your favorite spice rum and serve!
This drink can be served fresh or let stew in glass bottles for a few days. I also like to add a hibiscus bud for added flavor and color.
For those who can’t have the sugar content in creme de coco, you can use coconut juice with pulp instead and add agave if needed.
Grolsch [PhotoCred: Maria Flateau, Brownstone Living] Sooo, I needed some bottles for my annual holiday drinks that I give to my family every Christmas and saw this beauty at my local bodega. Not disappointed at all. I thought I was going to have to pour the the beer down the sink but alas it was good and I got to take both bottles to the head, lol.. Not to light nor heavy, this beer is crispy and refreshing and very satisfying. I'm not really good with beer descriptions but I do know taste and quality and this beer has both excellent taste and is made of good quality. A bit on the pricey side for one beer, roughly $4/bottle but well worth the coins, especially if you re-use the bottle. The bottles make for great use of home made what evers.. Manny's (Choice) October 2014 [PhotoCredit: Maria Flateau, Brownstone Living] Yal know I'm behind on 3 months of post so it's safe to assume that I have eaten here at least 20-30 times since I have taken this picture that I- Think- I Took in October of 2014, lol.. Anywho, the biscuit-like Empanada's made on premise are one of the many items that they make exceptionally well (on premises). Lately, I've been obsessed with their cappuccinos, lattes and Americanos all with sprinkles of cinnamon and of course made with half/half. For some reason my body rejects whole milk but loves half/half and heavy cream, smh.. Manny's is another restaurant under the Choice Market brand out in Fort Green and Clinton Hill communities. They use whole foods and fresh ingredients which is a major plus and good explanation for the $$ you spend when you go in thinking your going to order one thing and come out with more because of how good everything looks. Brooklyn Kolache Co. October 2014 [photoCred: Maria Flateau, Brownstone Living] Delicious. Stuffed perfection. They make sweet and savory buns. Up top are two savory selections with spicy mustard and sriracha condiments and of course iced Kitten Coffee with half/half and simple syrup. This is my go to breakfast spot. They have the best coffee and breakfast money can buy and your wait is no longer than 5 min, can't beat it. Also the back yard is pretty cool, nice staff and great location for where ever your headed as it is on the cusp of Bedford- Stuyvesant, Clinton Hill and Williamsburg.
