Eggnog Cupcakes with Spiced Rum Caramel
I made a chili chocolate cake with chocolate spiced rum & black pepper frosting topped with blackberries. 🍰🫐
Chili Chocolate Cake
Ingredients:
1 cup butter
1 ¾ cups white granulated sugar
3 eggs
1 ½ teaspoons vanilla extract
1 ½ cups milk
2 ½ cups all-purpose flour
6 tablespoons unsweetened cocoa powder
1 ½ teaspoons baking soda
1 teaspoon salt
½-1 tablespoon red pepper flakes (adjust to taste)
Instructions:
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
Sift together the flour, cocoa powder, baking soda, and salt in a bowl. Set aside.
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients, alternating with the milk, and mix just until combined.
Stir in the red pepper flakes, adjusting to taste.
Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely.
Spiced Rum & Black Pepper Frosting
Ingredients:
3 sticks (1 ½ cups) unsalted butter, softened
Pinch of salt (approximately ½ of 1/8 teaspoon)
¼ teaspoon ground black pepper (or to taste)
2 lbs (7 ½ to 8 cups) confectioner’s (powdered) sugar
4 tbsp half & half (or milk, as needed for consistency)
1 cup cocoa powder
3 tablespoons spiced rum
Instructions:
In a large mixing bowl, cream the butter until light and fluffy.
Gradually add the powdered sugar, one cup at a time, beating well after each addition.
Mix in the half & half, salt, and vanilla extract (if desired), blending until smooth.
Add the cocoa powder and ground black pepper, then beat until the frosting is light and fluffy.
Stir in the spiced rum and mix until fully incorporated.
Frost the cooled cake immediately, add the blackberries and enjoy!
(Adding chili flakes to boxed cake mix & adding spiced rum & black pepper to a premade frosting works too!)
