I think the reason flanderization is so common in fandom is because it's easy.
It takes time and effort to understand a source material, to analyze character motives, contextualize decisions made in the plot, write a characters voice properly, etc. All of that inherently requires more brain power.
However, whether from wanting to constantly pump out 'content' or for the sake of making a joke, fandom often takes the shorter route and flattens the original text. And I'm not saying that's necessarily bad. It just is what it is.
But I do think that's how fandoms shift the perspective of characters over time. Reducing a character down to two or three personality traits soon becomes the norm.
Again, I'm not saying people have to write a thesis on a work before depicting it - I just think well written stories deserve better
