Ingredients: 200g gluten-free pasta. 1 cup cooked chickpeas. 1 red bell pepper, diced. 1 small onion, diced. 2 cloves garlic, minced. 1 cup unsweetened almond milk. 2 tablespoons nutritional yeast. 1 tablespoon olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Follow the directions on the package to cook the gluten-free pasta. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Dice the red bell pepper, onion, and garlic. Cook the vegetables in oil until they are soft. The chickpeas will cook for another two to three minutes after you add them to the pan. Mix in nutritional yeast, paprika, cayenne pepper, salt, and pepper. Don't add any sugar. Mix everything together well, then bring it to a simmer.
