The holiday season calls for sweet treats like these gingerbread waffles with a touch of chocolate. They're cozy and warm, and the ginger, cinnamon, and molasses flavors make you feel better.
Ingredients: 1 3/4 cups all-purpose flour. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 1/2 tsp ground ginger. 1 1/2 tsp ground cinnamon. 1/4 tsp ground cloves. 1/4 tsp ground nutmeg. 1/4 cup brown sugar. 2 large eggs. 1/4 cup molasses. 1/4 cup unsalted butter, melted. 1 1/2 cups buttermilk. 1/2 cup mini chocolate chips. Cooking spray or melted butter for waffle iron.
Instructions: Preheat your waffle iron according to the manufacturer's instructions. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, nutmeg, and brown sugar. In another bowl, beat the eggs and then add the molasses, melted butter, and buttermilk. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the mini chocolate chips into the waffle batter. Lightly grease the waffle iron with cooking spray or melted butter to prevent sticking. Pour an appropriate amount of batter onto the preheated waffle iron, close the lid, and cook according to the manufacturer's instructions until the waffles are golden brown and crispy. Carefully remove the waffles from the iron and keep warm while you cook the remaining batter. Serve the Gingerbread Waffles with your favorite toppings such as whipped cream, maple syrup, additional chocolate chips, or as desired.
