When was her character used as mere fanservice/sex appeal though? Closest I can think of is in the second chapter when she caught the tray on her foot but the point of that scene was less "oo look at her legs" and more "wow she's really talented—how has loid not noticed anything?". Genuinely this manga doesn't feel like it has any fanservice to me; and I'm into women, I think I'd notice if there was.

By fan service I don't really mean her walking around nude all the time ( although her thorn princess outfit can be argued to be catering to male gaze but again, I'm not talking about that part). It's more about Yor fitting the classic shounen story female lead, where the girls don't bring much to the story personality wise and are just there looking pretty. The only difference Endo added to Yor's character is her physical abilities - she's no damsel in distress, but she is:
