Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup Cara Cara orange juice freshly squeezed. 1/4 cup buttermilk. 2 large eggs. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. Zest of 2 Cara Cara oranges. 1/2 cup white chocolate chips for the batter. Oil for frying vegetable or canola.
Instructions: In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, combine Cara Cara orange juice, buttermilk, eggs, melted butter, vanilla extract, and Cara Cara orange zest. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the white chocolate chips gently into the batter. Heat oil in a deep frying pan or deep fryer to 350F 175C. Carefully drop spoonfuls of the doughnut batter into the hot oil, frying 2-3 doughnuts at a time. Fry for about 2-3 minutes on each side, or until they are golden brown and cooked through. Using a slotted spoon, remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil. While the doughnuts are still warm, prepare the glaze. For the White Chocolate Glaze: Melt 1/2 cup of white chocolate chips in the microwave in 20-second intervals, stirring in between until smooth. Be careful not to overheat. Dip the tops of the cooled doughnuts into the melted white chocolate to coat them. Place the glazed doughnuts on a wire rack to allow the glaze to set.
