These Thai stuffed sweet potatoes are a flavorful and satisfying vegan dish packed with nutritious ingredients like quinoa, black beans, and fresh vegetables. The tangy and spicy dressing adds a burst of flavor to complement the sweetness of the potatoes.
Ingredients: 4 medium sweet potatoes. 1 cup cooked quinoa. 1 cup cooked black beans. 1 red bell pepper, diced. 1/2 cup chopped cilantro. 1/4 cup chopped green onions. 1/4 cup chopped peanuts. 1 tablespoon sesame oil. 2 tablespoons soy sauce. 2 tablespoons lime juice. 1 tablespoon maple syrup. 2 teaspoons grated ginger. 2 cloves garlic, minced. 1 teaspoon sriracha sauce optional.
Instructions: Get the oven ready by heating it up to 400F 200C. Clean the sweet potatoes and use a fork to make several holes in each one. Put the sweet potatoes on a baking sheet and bake them until they are soft, about 45 to 60 minutes. Put cooked quinoa, black beans, red bell pepper, cilantro, green onions, and peanuts in a large bowl. Take a small bowl and mix sesame oil, soy sauce, lime juice, maple syrup, grated ginger, garlic, and sriracha sauce, if you want to use it. Pour the dressing over the quinoa mixture and mix it all around. Make a cut down the middle of each sweet potato and use a fork to fluff up the inside. Fill up each sweet potato with the quinoa mix. Serve right away, and if you want, top with more chopped cilantro and peanuts.
