These Vegan Apple Pie Squares have all the great flavors of apple pie but are easy to carry around. They have a soft crust and a perfectly spiced apple filling, so they'll be a hit at any party or just as a sweet treat for yourself.
Ingredients: 2 cups all-purpose flour. 1/2 cup coconut oil, solidified. 1/4 cup maple syrup. Pinch of salt. 4 large apples, peeled, cored, and thinly sliced. 1/4 cup brown sugar. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1 tablespoon lemon juice. 2 tablespoons cornstarch. 1/4 cup water.
Instructions: Preheat the oven to 350F 175C and grease a 9x9 inch baking pan. In a mixing bowl, combine flour, solidified coconut oil, maple syrup, and a pinch of salt. Mix until a crumbly dough forms. Press half of the dough mixture evenly into the bottom of the prepared baking pan to form the crust. In a separate bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and water until well coated. Spread the apple mixture evenly over the crust in the baking pan. Crumble the remaining dough mixture evenly over the apple layer. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the apples are tender. Allow the apple pie squares to cool before cutting into squares. Serve and enjoy!
