This vegan protein power bowl doesn't have any gluten and is full of healthy foods and tasty flavors. It's a healthy choice that will fill you up and give you energy. This bowl is great for a quick and healthy meal because it has quinoa, chickpeas, and many different kinds of fresh vegetables.
Ingredients: 1 cup quinoa. 2 cups water. 1 cup chickpeas cooked and drained. 1 cup kale chopped. 1/2 cup carrots shredded. 1/2 cup red bell pepper diced. 1/4 cup cucumber sliced. 1/4 cup cherry tomatoes halved. 1/4 cup red onion thinly sliced. 1/4 cup avocado sliced. 2 tablespoons olive oil. 2 tablespoons lemon juice. 1 teaspoon garlic powder. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh cilantro and sesame seeds for garnish.
Instructions: Run cold water over the quinoa several times to clean it. Bring 2 cups of water to a boil in a saucepan. Then add the quinoa and stir it around. Turn down the heat, cover, and let it simmer for about 15 minutes, or until the quinoa is done and the water is gone. Cooked quinoa, chickpeas, kale, carrots, red bell pepper, cucumber, cherry tomatoes, red onion, and avocado should all be put together in a large bowl. Whisk the garlic powder, cumin, salt, and pepper into the olive oil in a small bowl. This will make the dressing. Pour the dressing over the ingredients in the bowl, and then toss to cover everything. Put some fresh cilantro on top and sesame seeds on top of that. Serve right away and enjoy!
