If they can see every timeline imaginable...

Does that mean they can see our AUs?

LIKE THINK ABOUT IT there's a core timeline and that core timeline could branch divergent timelines when an unexpected event occurs (from what I know, please correct me if I'm wrong) and those divergent timelines are basically alternative versions of how that core timeline could go

And if Timekeeper Cookie saw every ending, every timeline and every outcome, it may just be possible that they saw a divergent timeline where your AU is an actual thing
