“Matt,” Foggy says, gently, shaking his shoulder. “Hey, you fell asleep in the library again. You need to get up so people don’t start thinking I’m neglecting my sacred roommate duties--or that I'm kicking you out because of all the casual sex I'm having. Actually, it might be cool for people to think that. Still, wake the fuck up."

“Shit, sorry,” Matt sighs, sitting up, hair a mess from where his forehead was resting on the table. “I just need to finish this assignment and I’ll be done.”

Foggy looks down and sighs, saying, “That is not due for a damn week, you lunatic. Get up.”

“But if I finish it now, I can get a head start on next week,” Matt says, in the strained tone of someone that knows he’s pushing both of their limits.

“And if you get some beauty sleep, the fully horizontal kind with a pillow—maybe even two, I’ll share—you’ll keep those good looks of yours,” Foggy says, plucking at the sleeve of his t-shirt. It’s a little too tight because Matt’s been going to the gym a lot. Foggy has absolutely no thoughts on this.

“Thank you for the concern for my face,” Matt says, dryly, but with a tiny tired smile that makes it seem genuine, “but I just need one more hour—maybe two. I’ll come back after that.”

“Matt,” Foggy snaps, not completely sure where it comes from. He’s not exactly annoyed that Matt isn’t doing what he says, he’s annoyed that Matt isn’t taking of himself—and, maybe, further back in his head, even further than the part of his brain that sounds like his mom—that he won’t let Foggy do it, either.

Matt raises his head, eyes just a little bigger, glasses forgotten haphazardly on the table.

Foggy should apologize. But Matt’s definitely listening now.

His voice only wavers a little when he says, “Up.”

Matt’s face goes from surprised to a little slack and he almost immediately nods and gets up slowly, not stopping Foggy when he packs his backup up for him while he stretches out.

“My bones,” Matt moans, soft, a little pathetic.

“I know, buddy,” Foggy says, hefting Matt’s backpack on and gently taking his arm. “Come on. We’re getting dinner and then you’re gonna sleep, alright? Multiple hours.”

“Wait, my bag—” Matt says, starting to turn back.

“I’ve got it,” Foggy says. “No worries.”

“You’re carrying my bag for me?” Matt asks, amused.

“I'm a gentleman,” Foggy says, guiding him toward the door before he can protest. “I’ll pay for your dinner, too. The finest dining hall my meal plan can afford.”

He'd probably get pissed if he hears someone hating on Spider-Man for being enhanced.

"Spiderman isn't a menace because he can climb walls! He's a menace because he's climbing walls without a license or safety equipment! He's setting a bad example!"

I don't care that half of his face is covered, I can tell who my friends are from across a field, Foggy and Karen would at least get suspicious just from his body language.

This is a hard one to answer! I'm 99% sure nothing like that ever happens in the comics, both because Matt's Catholicism is not touched on (or nonexistent) in most runs and because most writers tend to steer clear of too much overt ableism after the '60s. However, you may want to check out Daredevil: Noir because it has some discussion of ableism limiting Matt's job prospects (and also it's very good). Superior Iron Man is another series you might be into, since it involves Tony thinking it's best that Matt gets his sight back regardless of his input.

As for fics, I asked around and some of us seem to remember a very brief scene like your ask happening in a fic when Matt is a kid, but we can't seem to find it!

So I'm not leaving you with nothing at all, though, I tried to scrounge up some recs that fit at least part of your ask:

Living in the Shadows by Oedipus_Conundrum is a WIP that has Matt working within his church community.

Sanctify by pogopop (@runpogorun) is a MattFoggy endgame fic where Matt is a priest exploring doubts about his chosen vocation. While it's not an overwhelmingly positive look at Matt and his faith, you also can't go wrong with pogopop.

It's a Cold and Broken Hallelujah by pollutedstar (@pollutedstaronarchive) is probably my all-time favorite Daredevil fic and it also explores religious themes, though this one too is more angsty. It's got some heavy topics, including internalized homophobia and CSA, but the writing is incredible and if you stick with it you'll find it's ultimately about healing and Matt coming back to his faith. It is also MattFoggy endgame.

Honeysuckle and Ivy by Nerdamongnerds (@nerdamongnerds) is a MattFoggy flower shop AU where Foggy is a florist, but in the first chapter Matt deals with some ableism from a condescending woman who thinks she's being helpful which is kind of along the lines of your scenario.

matt disappears. foggy stays. he looses matt again. and this time he lies down and doesn't get up. only that he does. because there is still a world to save and money to not be made. he sees the world cope and learns to live and hopes, hopes, hopes and the hope keeps breaking something new in him everyday. when matt comes back from the dead, a second time, foggy falls to his knees. the world is changed. foggy has changed. matt struggles like foggy has struggled already. but they find their rythem again

foggy disappears. matt disappears. there is no story for a while, and when they come back, together, to a world so changed, they roll up their sleeves and get to work.

they both stay. they both grieve. they both keep their heads on and their hands busy. they anchor each other like they've always done and they keep living. after the lost ones return, their spark becomes a blaze. their tiny piece of the world needs them more than ever.

foggy disappears. matt stays. the story is not so pretty. its bloody and full of grit. despair comes like tidal waves. matt has never not been a fighter. but often he forgets he is a man too. there's nobody who keeps calling for matt murdock anymore. so there is the devil. there is the call of justice. there's a million bad decisions to make. there's penance and atonement right before sin once again. foggy comes back. because foggy always come back for matt. and it isnt enough. it isn't enough cuz everything had gone to shit and foggy dont you know matt has bloodied his hands a hundred times too many. the matt u knew is no where to be found and oh, oh. you do know. you were nothing and nowhere but u felt those 5 years too. and oh everything is different now. but foggy stands in front of his partner anyway. he asks for his friend. maybe he was the only who never needed just matt, maybe he wasn't and other ppl needed just matt too. but foggy is the one asking for matt now, calling for him like he's done for so many years. will u bury urself alive because getting what you prayed for is too much?
