CORN SPINACH SANDWICH - my second entry in the breakfast series #whatsforbreakfast ☺️ ⏬Recipe Below This is a whole wheat sandwich with just 1 cheese slice used! Yes i try my best to use as less cheese possible but still make my dish yummy 😋 Me n hubs both like old ways of making sandwich in toasters so this dish is definately there in our breakfast. Corn Spinach Stuffing for 2 - 1 tbsp butter - 2-3 garlic cloves chopped(v love garlic use lil more. You u skip if u dun like or put less) - 1 medium sized chopped onion - 1/2 cup parboiled Corn kernels - 1 cup chopped Spinach - 4 tbsp milk - 1-2 sharp cheddar Cheese Slices or 1/4 cup grated cheese - 1/4 tsp Italian herbs - 1/4 tsp ground black pepper - pinch of garam masala (optional) - salt to taste Sauté garlic with butter in a pan. Don’t let it turn brown. Add onions and sauté till they r transparent. Now add the parboiled corn, pepper, salt, herbs, garam masala and mix well. Let the corn cook a lil bit more. Now add spinach and milk. Let it cook till spinach is done. Now add cheese and mix it till melts in the sauce. The stuffing is ready. Spread it on your bread and toast it.
