These Fresh Berry and Lemon Tarts are a delightful combination of tangy lemon and sweet mixed berries nestled in a buttery tart shell. They are perfect for showcasing the vibrant flavors of fresh seasonal berries.
Ingredients: 1 1/4 cups all-purpose flour. 1/2 cup unsalted butter, cold and cubed. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1 egg yolk. 2 tablespoons ice water. 1 cup fresh mixed berries such as strawberries, blueberries, raspberries. 1 lemon, zested and juiced. 1/2 cup granulated sugar. 2 tablespoons cornstarch. 1/2 cup water. Whipped cream or vanilla ice cream, for serving.
Instructions: Before you start cooking, heat the oven to 375F 190C. Pulse the flour, butter, sugar, and salt together in a food processor until the mixture looks like big crumbs. Pulse in the egg yolk and ice water until the dough comes together. Cut the dough into 6 equal pieces. Press one piece into the bottom and up the sides of a greased tart pan. Use a fork to make holes in the bottoms. It should take 12 to 15 minutes for the tart shells to get a light golden color. Take out of the oven and let cool all the way down. Put the berries, sugar, cornstarch, lemon juice, and zest of one lemon into a saucepan. Stir the mixture all the time over medium-low heat for about 5 to 7 minutes, or until it gets thicker. Take it off the heat and let it cool down a bit. Putting some of the berry mix into each tart shell. Put tarts in the fridge for at least an hour before you serve them. Ice cream or whipped cream should be added on top.
