A quick and flavorful vegetarian dump dinner made in the pressure cooker, perfect for busy days. This dish is packed with protein, fiber, and delicious veggies.
Ingredients: 2 cups quinoa, rinsed. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 cup diced tomatoes. 1 cup diced bell peppers. 1 cup diced zucchini. 1 cup vegetable broth. 1 tsp cumin. 1 tsp chili powder. 1/2 tsp garlic powder. Salt and pepper to taste. 1 cup shredded cheddar cheese optional, for topping. Fresh cilantro, chopped optional, for garnish.
Instructions: In the pressure cooker, combine quinoa, black beans, kidney beans, corn, diced tomatoes, bell peppers, zucchini, and vegetable broth. Add cumin, chili powder, garlic powder, salt, and pepper. Stir well to combine. Lock the pressure cooker lid in place and set to high pressure for 8 minutes. Once cooking is complete, use a quick pressure release. Carefully open the lid. Stir the mixture and let it sit for a few minutes to thicken. Serve the dump dinner in bowls, topped with shredded cheddar cheese and fresh cilantro if desired.
