Turkey Chilli
Recently I found myself with a pack of minced turkey and wasn’t quite sure what to do with it, so I decided to play around with my chilli recipe and substitute it for the beef. I was actually really surprised how well it came out, and how the result was almost indistinguishable from the normal beef version, with no noticeable turkey flavour at all. It’s definitely something I’d make again, so here’s how I did it.
Ingredients:
500g turkey breast mince
500g tomato passata
15g (approx) of spices combined to taste: chilli powder, ground cumin, paprika, cayenne, garlic powder, onion powder, cocoa powder, ground coriander seed, chilli flakes.
Beef dripping
1 beef stock cube
1 green bell pepper
1 can of kidney beans (optional)
Method:
Add approx 1 tbsp of beef dripping to a large pan on medium/low heat, and cook the turkey through without colouring the meat, making sure to break it down into very fine pieces.
Once any liquid has evaporated from the bottom of the pan, sprinkle over all your spices and stir to coat the turkey, then continue to cook on low for another 3-4 minutes.
Pour over the tomato passata and mix thoroughly, then sprinkle in the beef stock cube and stir again.
De-seed the green pepper, cut into large chunks, and add to the pan.
Drain and rinse your kidney beans and add as desired.
Mix once again and leave to simmer on low for an hour.
Remove the large chunks of green pepper - which will by now be very soft and insipid in appearance - and replace with smaller pieces of fresh green pepper if desired, cooking for a further few minutes until slightly softened.
The turkey chilli can be served exactly as you would with a regular beef chilli, and makes for a nice lighter alternative that’s still packed with flavour.

Ingredients:
2 lbs. 99% fat free ground turkey breast
1 large yellow onion diced
2 garlic cloves finely chopped
1 tablespoon olive oil
3 cups water
1 6 oz. can tomato paste
1 28 oz. can crushed tomatoes
1 15 oz. can diced tomatoes
2 15 oz. cans black beans, rinsed
1 cup frozen corn
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons chili powder
2 teaspoons cumin
Directions:
Add olive oil, onion and garlic to a large skillet and saute 3 to 4 minutes until slightly tender. Add ground turkey and cook until done, crumbly and brown. It should not be necessary to drain.
Add the meat mixture to the crockpot. Add the remaining ingredients starting with the water. Stir until blended.
Cover and cook on high for 3 to 4 hours, or 6 to 8 hours on low.
