Like regular guacamole but with a tasty twist, this black bean guacamole is full of protein and bright flavors from fresh black beans, tomatoes, cilantro, and jalapeo pepper. You can use it as a dip at parties or as a topping on different foods.
Ingredients: 2 ripe avocados, peeled and diced. 1 can 15 ounces black beans, rinsed and drained. 1 small red onion, finely chopped. 1 jalapeo pepper, seeded and finely chopped. 1 large tomato, diced. 1/4 cup chopped fresh cilantro. 2 tablespoons lime juice. Salt and pepper to taste.
Instructions: Use a fork to mash the avocados in a large bowl until they are smooth. In a bowl, mix the black beans, red onion, jalapeo pepper, tomato, cilantro, and lime juice. Make sure that everything is well mixed. Add salt and pepper to taste, and if you want, change the amount of lime juice. Put it on tacos, salads, sandwiches, or tortilla chips right away, or use it as a topping.
