Kulfi ice cream is a traditional Indian treat that tastes like cardamom and nuts and has a rich, creamy texture. Kulfi is denser and creamier than regular ice cream because it is cooked more slowly.
Ingredients: 1 liter full-fat milk. 1/2 cup condensed milk. 1/2 cup sugar. 1/4 cup chopped nuts pistachios, almonds. 1/4 teaspoon cardamom powder.
Instructions: In a heavy-bottomed pan, boil the milk on low heat until it reduces to half, stirring occasionally to prevent burning approximately 45-60 minutes. Add condensed milk, sugar, chopped nuts, and cardamom powder to the reduced milk. Continue cooking on low heat, stirring frequently, until the mixture thickens to a custard-like consistency approximately 15-20 minutes. Remove from heat and let it cool slightly. Pour the mixture into kulfi molds or small cups. Insert ice cream sticks or wooden popsicle sticks into each mold. Freeze for at least 6-8 hours or until completely set. Once set, remove from molds by dipping them in warm water for a few seconds and gently pulling out the kulfi. Serve chilled and enjoy the rich, creamy Glace indienne kulfi!
