FOOD! First up, spring has sprung and berries are back on season thank sweet baby Jebus, so overnight oats are as well! Next is the always delicious Buffalo Chickpea Mac ‘n’ Cheeze from Vegan Bowl Attack which, as y’all know, is one of my faves because Buffalo! Speaking of, made the Field Roast Fruffalo Wings over the weekend while hungover and they were pretty good! Kinda heavy, but definitely tasty. Next, another pasta and chickpea dish that I always forget about but totally love, Lemony Pasta with Chickpeas and Parsley from NYT that makes excellent leftovers too and last but not least I made Basic Bitch Tacos using the method from It Doesn’t Taste Like Chicken to make the tofu “meat” and, as I suspected, it was perfect! I know I’m always going on about this method, but it really is the best way to prep tofu as “ground beef.” And by basic, I mean with all the stuff that was on Tacos when I was a kid: lettuce, tomatoes, (vegan) cheese, (vegan) sour cream, black olives and jalapeños. The bitch part is for laughs.
