Ingredients: 1 lb ground beef. 1 onion, thinly sliced. 2 tablespoons butter. Salt and pepper to taste. 4 hamburger buns. 4 slices of cheddar cheese. 1 cup fresh arugula. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. 1 tablespoon balsamic vinegar. 1 teaspoon olive oil. 1 clove garlic, minced.
Instructions: Put the pan on medium heat and add the butter. Add the thinly sliced onion to the pan and stir them around a few times to make them caramelize and turn golden brown. It's going to take 20 to 25 minutes. Add pepper and salt to taste. Set up your grill or stovetop griddle over medium-high heat while the onions are caramelizing. Shape the ground beef into 4 burger patties that are all the same size. Add salt and pepper to both sides of each patty. To make medium-rare burgers, put the patties on the grill or griddle and cook for four to five minutes on each side. Change the cooking time to get the doneness you want. In the last minute of cooking, put a slice of cheddar cheese on top of each patty and let it melt. Set the sauce aside while the burgers cook.
