Hey guys! I decided to show a video on how to make this simple, yet tricky dish call Pad Thai, a Southeast Asian dish, using the Hexclad wok. This wok does a beautiful job because it’s non-stick and so easy to use and clean.
No, I did not get Hexclad’s endorsement for doing this video. I am simply doing it because I own their set of pans and wok and, also because I had promised some of my close friend ladies that I would do a Pad Thai demo. Although, I would have loved it even more if I got noticed! hehehe...
When making Pad Thai, be sure to have all your mis en place ready. Chop all the ingredients such as meat and vegetables and place them individually or in a large platter, all ready to go!
Always remember to have a bowl of water on the side while making this dish. Once the noodle has been added to the wok, ladle out about 1/4 cup of water and slowly pour it on all the sides. This technique will help add moisture to help steam the noodles without over drying, which can stick at the bottom of the wok.

Serves: 6-8 people
Ingredients
Making Sauce:
½ cup palm sugar, solid
¼ cup water
½ cup shrimp paste with bean oil
½ cup fish sauce, premium quality only (3 crab or 5 crab brand)
½ cup tamarind concentrate
2 Tbsp chili oil, optional
1 tsp paprika or ground chili pepper for spiciness
1 tsp coriander seed, ground
Black pepper to taste
1 lb. Rice Noodles for Pad Thai, soaked in warm water for 20 minutes and drained
Bean sprouts, rinsed and drained
Garlic chives, cut to ½ inch long
8 oz chicken breast, thinly sliced and marinated in 1 Tbsp fish sauce and black pepper
8 oz raw shrimp, skin removed and deveined and drained
4 large eggs
4-5 Tbsp Vegetable oil, or as needed
4 garlic cloves, chopped
3 large shallots, chopped
Directions: To make the sauce.
1. In small pot, add palm sugar and water. Bring to boil on medium-high heat. Once sugar dissolves, lower heat to medium low and simmer to thicken, 5-8 minutes. Turn off heat and allow to cool a bit.
2. To the pot add in: shrimp paste, fish sauce, tamarind, chili oil, paprika or ground chili pepper, and black pepper. Stir to mix well. Taste for consistency of sweet, sour, and salty. Ready to use.

Ingredients: 1 1/2 cups organic all-purpose flour. 1/2 cup organic granulated sugar. 2 tsp organic baking powder. 1/2 tsp organic baking soda. 1/4 tsp organic salt. 1/2 cup organic unsalted butter, melted. 1 cup organic buttermilk. 1 organic egg. 1 tsp organic vanilla extract. 1 cup mixed organic berries strawberries, blueberries, raspberries.
Instructions: Warm your oven up to 375F 190C and put organic paper liners in a muffin tin. Mix the sugar, baking powder, baking soda, and salt in a bowl with a whisk. The melted butter, buttermilk, egg, and vanilla extract should all be mixed together well in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. It's okay if there are a few lumps; don't mix it too much. Add the mixed berries to the batter slowly. Fill up about two thirds of the way to the top of each muffin cup with batter. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. For a few minutes, let the muffins cool in the pan. Then, move them to a wire rack to cool completely. Have fun with your tasty organic mixed berry buttermilk muffins!

These Smoky Sweet Cherry Pepper Cheeseburgers are a delicious twist on a classic burger. The smoky cheddar cheese pairs perfectly with the sweet and tangy cherry pepper relish, creating a flavor explosion in every bite. It's a burger that will satisfy your taste buds and leave you craving for more!
Ingredients: 1 lb ground beef. 4 hamburger buns. 4 slices of smoked cheddar cheese. 1/2 cup sweet cherry pepper relish. 1/4 cup mayonnaise. 1 teaspoon smoked paprika. Salt and pepper to taste. Lettuce and tomato slices for garnish.
Instructions: Preheat your grill to medium-high heat. In a bowl, combine the ground beef, smoked paprika, salt, and pepper. Mix well and shape into 4 burger patties. Place the burger patties on the grill and cook for about 4-5 minutes per side, or until they reach your desired level of doneness. During the last minute of cooking, add a slice of smoked cheddar cheese to each burger patty and allow it to melt. While the burgers are cooking, toast the hamburger buns on the grill until they are lightly browned. In a small bowl, mix together the sweet cherry pepper relish and mayonnaise to create a smoky sweet sauce. To assemble the burgers, spread the smoky sweet sauce on the bottom half of each toasted bun. Place a lettuce leaf and a tomato slice on top of the sauce. Add the cheesy burger patty on top of the veggies. Finish by placing the top half of the bun over the patty. Serve your Smoky Sweet Cherry Pepper Cheeseburgers hot and enjoy!

Enjoy crispy baked chicken tenders coated in a flavorful breadcrumb mixture, served with a sweet and tangy honey mustard dipping sauce.
Ingredients: 1 lb chicken tenders. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 1 tsp garlic powder. 1 tsp paprika. 1/2 tsp salt. 1/4 tsp black pepper. 1/2 cup mayonnaise. 2 tbsp honey. 2 tbsp Dijon mustard.
Instructions: Preheat oven to 400F 200C. In a shallow dish, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Coat each chicken tender in mayonnaise, then dredge in breadcrumb mixture, pressing gently to adhere. Place coated tenders on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until chicken is cooked through and coating is golden and crispy. While the chicken is baking, whisk together honey and Dijon mustard in a small bowl to make the honey mustard dipping sauce. Serve the crispy baked chicken tenders hot with the honey mustard sauce on the side.
