Ingredients: 2 pork tenderloins about 1.5 lbs each. Salt and black pepper to taste. 1 teaspoon garlic powder. 1 teaspoon dried thyme. 1/2 cup balsamic vinegar. 1/4 cup honey. 3 sweet potatoes, peeled and cut into chunks. 1 cup strawberries, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. Juice of 1 lime. Cooking spray or olive oil for greasing.
Instructions: Season the pork tenderloins with salt, black pepper, garlic powder, and dried thyme. Place them in the slow cooker. In a bowl, mix balsamic vinegar and honey. Pour the mixture over the pork tenderloins. Add the sweet potato chunks to the slow cooker, arranging them around the pork. Cover and cook on low for 4-5 hours or until the pork is tender and reaches an internal temperature of 145F 63C. While the pork and sweet potatoes cook, prepare the strawberry salsa.
