I took some inspiration from @lechefpaul and made a rib cap steak today. I butchered the three slabs of dry aged spinalis dorsi off of a rib primal at a butchery class myself, so this was a really fulfilling experience. Spiraled and trussed, seared in ghee with garlic and rosemary, roasted to 120F, rested to 130F, torched a few spots that needed a bit more crust, and then sliced and finished with cracked pepper and flake salt.
