I watch SP out of order a lot, meaning I get a mix of really old and new episodes into my frontal lobe and the absence of Chef is really felt. Since most SP adults are idiots, Chef was the true counterbalance, and the real anchor of the series. The kids already act like mini-adults until they go and meet Chef. He had this incredible warm presence and this crucial reminder that the main characters are just kids after all. There's a lot of interesting paths his character could have taken - like, he could've acted as this "measuring stick" of how much the kids are growing, how their lives become more complicated and how their ideas start conflicting with Chef's. Once Chef was gone nothing really was the same anymore. I still refuse to watch the episode where he leaves. It's too painful knowing what happened behind the scenes.
